COCONUT AND CHOCOLATE BROWNIES
INGREDIENTS
- 2 eggs
- 1 1/4 cups sugar
- 1/2 cup unsalted melted butter
- 1 teaspoon vanilla extract
- 3/4 cup powdered cocoa
- 1/2 cup flour
- 1 tablespoon cornstarch
- 2 1/2 cups grated coconut
- 1 can condensed milk
- 2 cups chocolate ganache
INSTRUCTIONS
- Preheat oven to 350 degrees. Line a springform pan with parchment paper.
- In a mixing bowl, whisk the eggs with the sugar until combined. Add the melted butter and the vanilla extract. Add the cocoa, flour and cornstarch and mix together. Pour the mixture into the prepared pan. Bake for 30 minutes. Remove from oven and allow to cool.
- In a bowl, combine the grated coconut and the condensed milk. Top cake with coconut mixture and use a spatula to spread out evenly. Pour ganache over the top, and refrigerate for 2 hours before serving.
