MATCHA BUTTER CUP

INGREDIENTS
200 grams dark chocolate, chopped
75 grams butter, room temperature
60 grams ground almonds 
35 grams powdered sugar
1 teaspoon matcha 
Matcha, to decorate
Gold leaf, to decorate

PREPARATION

Toast the ground almonds in a dry pan until their color changes.
In a small bowl, add dark chocolate. Melt half, then save the other half for later.
Spoon 1 tablespoon of melted chocolate into a muffin liner and use the back of the spoon to push the chocolate about ½ of the way up the side of the liner. Repeat with the rest of the liners.
Chill for 1 hour in a refrigerator.
In a medium bowl, add butter and mix. Add ground almonds, powdered sugar, and matcha, and mix well. 
Chill for 30 minutes in a refrigerator.
Once the mixture has firmed up, divide into 6 equal pieces. 
Place a piece of the match mixture into each muffin liner. 
Using your fingers press flat, and chill for 30 minutes in a refrigerator.
Melt remaining chocolate and pour over matcha mixture to cover and encase it. 
Drop the muffin mold on the table and spread it evenly so that there is no gaps.
Decorate with matcha and gold leaf, and chill for 1 hour.
Remove from muffin liner and enjoy!
