SPICY SOY TUNA BURGER

Spicy Soy Tuna Burger
INGREDIENTS
- 1/3 cup of chopped dill, coriander and mint
- 1 chopped pickled jalapeno
- 200 grams of fresh tuna, minced
- 1 tablespoon of lime zest
- 1 avocado
- 2 tablespoons of mirin
- 1/2 teaspoon sesame oil
- 2 tablespoons of dark soy sauce
- 1 teaspoon brown sugar
- 1 sliced pineapple
- 1 burger bun, toasted in butter
- 1 tablespoon of Japanese mayonnaise
- Alfalfa sprouts and salt to season
INSTRUCTIONS
- Mince all the herbs.
- Mix the minced tuna with the herbs, lime zest and the jalapeno
- Mash the avocado with a little bit of salt.
- For the tuna burger and sear in a hot pan with some olive oil. Let one side get brown.
- Flip. while cooking the other side, add the soy, sesame oil and sugar. make sure to baste the burger with the sauce.
- Next to the burger sear a 1/2 inch slice of pineapple. Season with salt.
- Toast the burger bun.
- Assemble: Bun, avocado, pineapple, burger, mayo, sprouts, bun.
