SPICY SOY TUNA BURGER

Spicy Soy Tuna Burger

INGREDIENTS

  • 1/3 cup of chopped dill, coriander and mint
  • 1 chopped pickled jalapeno
  • 200 grams of fresh tuna, minced
  • 1 tablespoon of lime zest
  • 1 avocado
  • 2 tablespoons of mirin
  • 1/2 teaspoon sesame oil
  • 2 tablespoons of dark soy sauce
  • 1 teaspoon brown sugar
  • 1 sliced pineapple
  • 1 burger bun, toasted in butter
  • 1 tablespoon of Japanese mayonnaise
  • Alfalfa sprouts and salt to season

INSTRUCTIONS

  1. Mince all the herbs.
  2. Mix the minced tuna with the herbs, lime zest and the jalapeno
  3. Mash the avocado with a little bit of salt.
  4. For the tuna burger and sear in a hot pan with some olive oil. Let one side get brown.
  5. Flip. while cooking the other side, add the soy, sesame oil and sugar. make sure to baste the burger with the sauce.
  6. Next to the burger sear a 1/2 inch slice of pineapple. Season with salt.
  7. Toast the burger bun.
  8. Assemble: Bun, avocado, pineapple, burger, mayo, sprouts, bun.
